A nose with white fruit and floral notes – difficult to guess this is Sauvignon on the nose, so removed we are from the clichés of the variety. Palate: sublime substance, depth, and a finish with noble bitter notes and incredible length. A wine of great class, a favourite at our tasting.

Sauvignon farmed biodynamically (though not certified) and planted on nine plots between 0.11 and 0.47 ha in size, with yields of 14 to 45 hl/ha. The soils include clay-limestone in Chéry, St Romain and Les Coignons, alluvial gravel in Reuilly and Lury, and clay and silt in Preuilly. Natural grassing grows between the vine rows. Vine training directs the plants skyward, in a search for verticality and clarity. Direct pressing, cold settling, 18 months of maturation in vats and casks that have seen several wines, then blending with little sulphur.

Guillaume Sorbe
Guillaume Sorbe is part of a generation of winegrowers who work modestly, rigorously, and unrelentingly – and produce simply exceptional wines. After starting out as a cook, then a sommelier, he finally turned to winemaking, receiving his BTS degree in winemaking and viticulture in Beaune. This winegrower's son then founded his own estate in 2006, borrowing his great-grandmother's maiden name...
