100% Sauvignon from vines planted on four parcels of Portland limestone soils, farmed biodynamically, with a homeopathic approach to treatments. The grapes are harvested by hand, direct pressed, and vinified separately by parcel, with blending after 10 months of maturation, 90% in stainless steel tanks and 10% in barrels that have seen 8 to 10 wines, providing natural micro-oxygenation. Bottled at the estate after a light filtration, with sparing use of sulphites.
