100% Chenin from 10- to 40-year-old vines farmed biodynamically on flinty clay soils over tufa stone. The wine is a blend of barrels chosen for their fruity character from 24 parcels spread over 5 hectares in the communes of Lhomme and Ruillé-sur-Loir. Harvesting is done by hand with crates. Vinification: after pneumatic pressing and natural cold settling, the wine ferments with indigenous yeasts, then matures on its fine lees in barrels that have seen several wines for 11 months. Bottled at the estate in September 2021 with a small dose of sulphur.
