A 100% natural Pinot Noir grown biodynamically, from a 5-ha parcel planted on a clay-limestone soil. The vines are 30 years old and the yields around 30-35 hl/ha. Vinification: whole bunches are macerated 10 days, with 20-30% of the grapes botrytised (concentrated by ‘noble rot’). No sulphur is added during either vinification or maturation. The wine is matured 2 years in old barrels on its fine lees, and is bottled without filtration. Raudaunas means “red” in Lithuanian, the native language of Sébastien’s wife.
Sébastien Riffault, look no further, it’s him, the 100% natural winemaker in Sancerre. His estate, Domaine Etienne et Sébastien Riffault, is located in Sury-en-Vaux. There Sébastien works his soils with horses, uses zero chemicals in the vines, and farms biodynamically.
