100% Pineau d'Aunis, from vines aged between 10 and 50 years old, cultivated biodynamically and planted on 14 plots spread over the communes of Lhomme, Chahaignes and Marçon, for a total of 3.7 hectares. Harvesting is done by hand with crates. Alcoholic fermentation is done in vats with punching down of the cap, followed by natural malolactic fermentation in barrels and almost 20 months of maturation on the fine lees in old casks and egg-shaped concrete vat (17hl). Bottled at the estate with a very light dose of sulphites in April 2025.
