Sancerre "Les Grands Champs" - 2020 - Paul Fouassier
Domaine Fouassier
Complex and luscious nose carried by notes of butter, of lemon confit, flowers, mineral backbone... On the palate: clean and direct, elegant, the texture is soft and delicate, this is a mouthwatering juice with a saline finish.

A 100% Sauvignon cuvée, from 30 to 45-year-old vines grown organically and biodynamically, certified since 2012. The vines are planted on a plateau that shows limestone soils. Manual harvest with yields around 45 hl/ha. Vinification: grapes are destemmed, direct pressed, and matured in stainless steel vats for two years. A light dose of sulphites is added, for a result of 54 mg/liter of total SO2.

Paul Fouassier
Paul Fouassier, who earned his viticulture and oenology degree in 1998, worked in several leading Bordeaux châteaux (Pavie and Angelus among others) before returning to his large family estate in 2001. The estate holds 60 hectares, 50 ha of Sauvignon and 10 ha of Pinot, which he manages with his cousin Benoît. The duo represents the 10th generation, drawing the best from the rigour of Benoît...
