100% Cabernet Franc from vines grown biodynamically, planted in 1999 on the mid-slope on the western side of the Puy Notre Dame hill, with clay-limestone soils. Harvesting is done by hand with small crates. Vinification: the grapes are 100% destemmed, followed by 10 days of maceration in vats, gentle extraction, pressing in a vertical press, 9 months of aging in vats. Neither fined nor filtered, bottled at the Estate in July 2021 without any addition of sulfites.
