100% Pineau d'Aunis from 30-year-old vines, grown organically and planted on a 0.3 hectare plot facing South-East, on flinty-clay soils. The grapes were bought to the winemaker Dominique Norguet in Thoré-la-Rochette. Manual harvest, and natural vinification: total de-stemming, 10 days of maceration, indigenous yeasts, gentle pressing, 6 months of aging in vats. Bottled after a light filtration, and just a pinch of sulphur.
