Eclosion - 2019 - Céline Oulié
Clos Les Mets d'Âmes
The ideal aperitif wine, both dry, fruity, mineral and deep. Just the right amount of complexity, of power, nose between yellow fruits, citrus fruits, ginger, honey and a hint of inshell almonds. Beautiful!!!

A dry Pacherenc-du-Vic-Bilh, almost a pure Petit Manseng, just "sprinkled with the spirit of the Petit Corbu grape variety" says Céline! Vines grown biodynamically, certified by Demeter since 2016, and harvested manually, in small crates. Vinification: direct and long pressing, fermentation and 13 months of aging in concrete egg-shaped vats, whose shape allows a continuous and spontaneous natural movement of the wine. Just a micro-dose of sulfur.
