A few words from the estate: "When the Grenache berries turn into bubbles, thanks to the Pineau d’Aunis! These Grenache grapes bring us a fresh, easy-drinking sparkling red." Zero gram of residual sugars.
Blend dominated by Grenaches (95%), sourced from biodynamically farmed vines, harvested by hand in small crates on the 1st of September 2022. Grapes are purchased from a biodynamic-certified grower. Vinified at Laure-Anne and Clément's cellar: fully destemmed, with a 3-week maceration and regular punch-downs by foot. Bottled with added overripe Pineau d’Aunis marc to spark the fermentation. Aged on laths for 9 months, disgorged in June 2023, with a very light touch of sulfur.
