90% Pinot Noir blended with a touch of Pinot Gris, sourced from organically farmed vineyards; this cuvée was made thanks to purchased grapes, from a region you might be able to guess thanks to the bird on the label! Manual harvest. Natural winemaking in Henri's cellar: whole-cluster maceration, gentle pressing, 9 months of aging in stoneware jars and in barrels that have seen several wines ( only10–15%). Bottled without fining or filtration, with just a micro-dose of sulfur; followed by 9 months of further maturation in bottle before release.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
