100% Pinot Noir, from old vines grown on gray, black, blue, and green marls, and Triassic sandstone deposits. A parcel planted with various Pinot varieties, some of which have names only the old-timers could remember, dating back to the 1950s. Harvested by hand on the 2nd of September, fully destemmed by hand in the vineyard. One month of maceration in stainless steel vats, with several pump-overs and no punching down. Nine months of aging in large oak casks. Bottled on 14th of July, 2021, without fining or filtration, and without added sulfur.
Tony Bornard
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
