100% Savagnin from biodynamically farmed vines, planted in 1990 on iridescent Triassic marl, facing east. The grapes were harvested by hand on September 10, 2018. Natural vinification: direct pressing of the whole bunches, fermentation started in vats then the wine was transferred to 2,400-liter casks. Extended aging... for 6 years! On the lees, with regular topping up. Bottled on August 29, 2024, without fining or filtration, no added sulfites.
