60% Pineau d'Aunis and 40% Chenin from vines ranging in age from 10 to 50 years, farmed biodynamically and planted on flint-clay soils over tuffeau limestone. Hand-harvested from September 6 to 29, 2022. Direct pressing in a pneumatic press, so the Pineau d’Aunis does not have time to impart color, just like a Blanc de Noirs. Aged in 600-liter barrels on fine lees for 13 months, bottled in November 2023, secondary fermentation in bottle with the estate’s own must. Aged on racks for one year, disgorged in December 2024.
