A 100% Sauvignon cuvée made from vines cultivated organically and planted on several parcels of clayey-sandy and flinty soil, this cuvée was made thanks to grapes bought to other organic winemakers. The grapes were harvested by hand by Hervé's team, in small crates, sorting in the vineyard. Vinification: direct pressing, indigenous yeasts, fermentation and aging on fine lees in fiber vats and stainless-steel vats, for five months. Bottled during the first week of February 2026 without fining or filtration, just a micro-dose of sulphur.
