100% Pinot Noir classified in Coteaux Bourguignons appellation, from 30- to 40- years old vines, farmed organically and planted in the lower part of Volnay. Manual harvest at optimal phenolic maturity (hence the name “peaux rouges” which means red skins, because the anthocyanins that bring the color were in perfect balance). Natural vinification: total destemming, gentle maceration, aging for 9 months, 20% in barrels and 80% in stainless steel vats. Light filtration, and just a micro-dose of sulfur added after the fermentations.

Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
