Bourgogne Aligoté Doré Presse Verticale 429 - 2021 - Boris Champy

Domaine Boris Champy

Complex nose with notes of grapefruit, lychee and honeysuckle. The palate is precise and intense, with a lovely mineral freshness. An aligoté crafted for gastronomy, that would aslo be perfect paired with a seafood platter.

100% Aligoté Doré from biodynamically-grown vines planted on several small plots at an altitude of over 400 meters, with a wide variety of soils, marl and clay over limestone slab. Harvested by hand at full ripeness, the grapes are slowly and gently pressed in a vertical press to obtain a clear, high-quality juice, without settling. Vinified in 600-liter barrels, aged 12 months on lees with 1/3 new oak, then a few months in vats on lees before bottling. Not fined or filtered, very low sulphur.
