Burgundy
A nose of ripe fruit, with notes of cherry, plum and blackcurrant. The palate is full bodied, frank, and very fresh, with soft tannins and a precise finish.
100% Pinot Noir, from a 50-are parcel of 50-year-old vines planted at the Le Saugeot vineyard site. Cultivated biodynamically, with ploughing of the soil, no chemicals, and harvesting by hand in small crates. Vinification: whole grape bunches in wooden vats, light extraction, some pumping over, a little cap punching, and 15 months of maturation on the lees in barrels that have seen several wines. Bottled at the estate without fining or filtration, just a micro-dose of sulphur at bottling in order to protect the wine.
