Savagnin grown biodynamically on a remarkable clay-rich Lias terroir, from vines planted just below the village of Menétru-Le-Vignoble. Hand-harvested late in the season, during the second half of October. The wine is aged in a large oak barrel for an incredible 12 years—twice the legal minimum of 6 years and 3 months—without any topping up. During this time, a natural layer of yeast, known as the “voile,” forms on the surface of the wine, feeding on the liquid and protecting it from full oxidation, while a portion of the wine slowly evaporates.
