100% Chardonnay from vines farmed biodynamically and planted between 1962 and 1978 on clay (60%) and limestone soils (40%, Bajocian Age scree), facing west. The vineyard is ploughed, and the grapes handpicked with small crates. Vinification: direct pressing, followed by transfer into 228-litre barrels for fermentation and maturation for 12 months, with 10% new oak. Bottled with just a microdose of sulphur.
