Jura
A memorable tasting for this concentrated wine of rare complexity, carried by notes of citrus, spices, a touch of honey and smoke. Palate: very fine volume, this is a Chardonnay without any heaviness thanks to its chiseled structure and salty finish.
Wine certified organic by Ecocert and biodynamic by Demeter, from a very rare clayey marl terroir from the Lias period, that this grape variety likes a lot! The vines were planted in 1947, 1953 and 1958. Grapes are harvested by hand, vinification and maturation in Burgundy barrels for 24 months. Bottled at the estate without fining or filtration, a light dose of sulphites at bottling, total SO2 less than 20 mg/l.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
