A rare cuvée prized by connoisseurs, and rightly so: the nose is highly complex and evolving a lot over the glasses, from blueberry to wet undergrowth soils to toasted notes (think burnt basque cheesecake!). Palate: serious structure and endless length.

100% Côt from organic vines over 70 years old, with vine shoots from three to seven meters long. Natural winemaking "the same way I've done it for 47 years": hand-picking in several passes to obtain perfect ripeness, "and then I keep it as simple as possible", pressing, several rackings to obtain a clear wine, two years of aging in barrels that have seen several wines. Two years of maturation in in the estate's cellars. Unfined and unfiltered, with no added inputs or sulfites. Only two barrels produced.
