100% Sauvignon from 35-year-old vines farmed organically and planted on a 1.4-ha parcel on a flinty clay soil over chalk. Yields are around 40hl/ha. Viticulture and winemaking are 100% natural: manual harvest, direct pressing, vinification and maturation for 10 months, for 75% in Burgundian oak barrels of 228 liters that have seen several wines, and 25% in amphorae. Neither fined nor filtered, just a tiny pinch of sulphur at bottling, on the 15th of June 2023.
