70% Syrah and 30% 85-year-old Grenache Noir vines, from organically farmed vineyards planted on silty sand, harvested by hand on August 12th, 2025. Natural vinification: 6 days of whole-cluster carbonic maceration in 60-hl fiberglass tanks, gentle pressing, fermentation in 30-hl fiberglass tanks, followed by one month of aging (short! It’s a primeur!) in 500-liter barrels that have seen several wines. Bottled without fining or filtration, with just a micro-dose of sulfur (1 g/hl upon racking from the barrels).
