A blend of 70% Syrah and 30% 85-year-old Grenache Noir vines, from organically farmed vineyards planted on sandy-loam soils. The grapes were harvested by hand on the 12th of August 2025. Natural vinification: 6 days of whole-cluster carbonic maceration, gentle pressing, 1 month and a half of aging (short! it’s a primeur!) in 500-liter barrels previously used for other wines. Bottled without fining or filtration, with just a micro-dose of sulfur (1 g/hL at barrel racking).
