100% Gamay, selected from several parcels planted on granitic and sandy soils in the communes of Juliénas and Jullié; 70 to 90-year-old vines, certified organic. Manual harvesting, grapes sorted in the vineyard. Vinification: carbonic maceration of the whole bunches, without punch downs. Maturation: 50% in vats and 50% in barrels for 10 months, no fining, no filtration, just a pinch of sulphur at bottling.
