100% Chardonnay from 30-year-old vines, grown organically and planted on clay-limestone soils. Manual harvest. Vinification: direct pressing, fermentation thanks to indigenous yeasts only, malolactic fermentation is done, 6 months of aging in stainless steel vats. Bottled at the estate after a light filtration, just a micro-dose of sulphur.
