Allez Goûtons could be translated by "come on let's taste it!": words not to be said twice to JUS'tos!!! Notes of strawberry, cherry, soft spices, hint of smoke. Pure, fruity and easily digestible on the palate, with a refreshing acidity. In short, it's tasting time!
100% Pinot Noir from biodynamic, hand-harvested young vines. Natural vinification: some of the grapes are destemmed and placed at the bottom of the vat, the rest in whole bunches. Only a few punchings of the cap, gentle pressing, short aging in vats. It's a primeur! So bottled very early, at the end of November 2022, at the end of alcoholic fermentation. Unfined and unfiltered, without added sulfites.
