100% Pinot Noir, from vines around 40 years old, farmed organically and planted in two parcels: one in the centre of Mercurey, with red clay soils over limestone, and the other overlooking Mercurey in the Vallée des Vaux, with granite soils. The grapes are hand harvested, and vinified naturally: two weeks of semi-carbonic maceration, the grapes left untouched for 10 days, followed by 5 days with crushing and punch downs. Matured 10 months in barrels that have seen several wines. Bottled in June 2021, without fining, filtration or added sulphites.
