A cuvée of Pinot Noir from 45-year-old vines farmed organically, blend of several plots, with half from Volnay (deep and clayey soils) and half from Vézelay (on silt and red clay). The grapes are harvested by hand, with careful sorting in the vineyard. Vinification: the grapes – half whole cluster and half destemmed – are fermented in vats, with a few cap punch downs, followed by blending of free run and press wines. Matured 10 months, 50% in barrels and 50% in vats. Neither fined nor filtered, and a micro-dose of sulphur at bottling.
