100% Chardonnay from old vines of more than 70 years old, grown biodynamically and planted a clayey limestone soil maintained by ploughing. The grapes are handpicked, and the whole harvest is slowly pressed in a pneumatic press, with no added sulphites or yeasts... or anything else for that matter. This cuvée is a blend of the 2020 and 2021 vintage, with a prolonged aging on fine lees in barrels that have seen several wines, for more than two years, before a few months in vats. Unfined, unfiltered, without added sulphur.
Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
