Hyper-aromatic, powerful nose, sublime oxidative structure carried by walnuts, candied lemon and orange. Palate: tense, voluptuous, a very nice fat and crazy length. Hors piste is probably a bit of bottled magic.

100% Chardonnay from old vines of almost 70 years old, grown organically and planted on clay-silt soil maintained by plowing then grassing. Slow pressing of the whole bunches in a pneumatic press, no sulphiting or yeast addition... And absolutely nothing else. Very, very long aging, almost ten years (!!!) on fine lees, in barrels that have seen several wines. End of the aging in vats.

Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
