Chardonnay from the vineyard site known as "La Grande Chatelaine", located in the middle of the slope of the Montagne de Beaune, overlooking the valley connecting Beaune to Bouze-lès-Beaune, showing clay-limestone soils with gravel over bedrock. Vines are 30 and 40 years old, facing southwest. Vinification: direct pressing, settling of the must, fermentation in oak barrels which have seen several wines to preserve purity and minerality. Matured on lees for 12 months, bottled with a light dose of sulphur.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court.
