100% Chardonnay, a blend of several parcels of 20-year-old vines in the commune of La Salle, 15 km north of Mâcon, grown on clay and silt soils maintained by ploughing and grassing between the rows. The grapes are handpicked, and the whole harvest is slowly pressed in a pneumatic press, with no added sulphites or yeasts... or anything else for that matter. Matured 24 months on fine lees in barrels that have seen 3 to 5 wines. Philippe is passionate about his soils, and practices biodynamic viticulture.

Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
