Burgundy
A racy, wild, "brambly" nose, with explosive notes of blackcurrant buds. The palate is velvety, with supple tannins. A structured wine, both full and ethereal. Morgan's advice: enjoy it with red meat, pigeon stuffed with grapes, or a filet mignon of glazed pork.
100% Pinot Noir, a cuvée made with purchased grapes grown on a 33-are plot of clay-limestone soils and harvested by the estate’s team, on Les Vallerots climat. Yields 20 hl/ha. Vinification: all work is done by gravity – cold pre-fermentation maceration with 100% destemmed grapes, indigenous yeasts, some pumping over, and 12 months of maturation in barrels (25% are new oak). Blended in vats, and bottled at the estate.
