100% Pinot Noir from the 2022 vintage, vines cultivated organically and planted in the Aube region: from “similar neighboring vineyard sites facing North”. The grapes are pressed in a traditional Coquard vertical press. Vinified and matured in wood, with indigenous yeasts, disgorged in September 2024, with traditional ‘flying’ disgorgement, and zero dosage. The purpose of this cuvée is to capture the impact of the exposure in the bottle since it is the same grape variety, harvest and vinification than Austral.
Benoît Doussot
Benoît Doussot, the winemaker behind and at the helm of Champagne Clandestin, followed an uncommon path for the region — a rarity in Champagne, as he doesn’t come from a family of vignerons.
