A favorite of the team during the tasting — a beautiful Champagne with notes of dried apricot, pear, honey, and beeswax, with a toasty touch. The palate is airy, generous, and highly aromatic. Long finish on dried fruits and marzipan. Sublime with langoustines.

80% Chardonnay and 20% Pinot Noir from 35-year-old vines on average, planted in Rilly-la-Montagne—a Premier Cru village—on the “Bas des Blanches Voies” parcel, rooted in chalk soils. Manual harvest, traditional press, gravity-settling, fermentation in 228L barrels, no malolactic fermentation. Aged on fine lees for 10 months before bottling, followed by 36 months of ageing on lattes in the Domaine’s chalk cellars. Disgorged in July 2024, with a dosage of 7 grams per litre.

Laurent Champs
Laurent Champs has been at the helm of Champagne Vilmart since 1995. He’s the fifth generation in a line of winemakers that began in 1890, when Désiré Vilmart founded the Domaine in Rilly-la-Montagne, at the foot of the Montagne de Reims.
