Pineau d'Aunis from organically-grown vines planted in 2010 on flinty clay. Harvested by hand when just under-ripe to maintain the tart and peppery expression of the Pineau d'Aunis grape. Vinification: semi-carbonic maceration of the whole bunches for 10 days, no punching of the cap, and infrequent pumping over – just a light sprinkling of the cap. Blending of press juice and free-run juice, aging in fiber vats, bottled at the estate without fining or filtration, only a tiny dose of sulphur at bottling.
