85% Grenache and 15% Syrah, from vines aged between 60 and 104 years old, farmed organically and planted in the Vaucluse, on clay and limestone soils. This is the estate’s oldest cuvée, produced for the first time in 1964. The grapes are harvested by hand, with yields of 20 hl/ha, and careful sorting of the grapes. Vinification: the grapes are 100% destemmed, followed by maceration for three weeks to a month, and maturation for 9 to 12 months, half in vats and half in casks. Bottled without fining, filtration, no added sulfites.
