Blend: 50% Chardonnay and 50% Pinot Meunier, a cuvée made from grapes purchased from vines planted in Chavot-Courcourt on very poor soils of outcropping chalk and hard limestone. Exposed to the north, the terroir is similar to that of the Côte des Blancs. Hand-harvested and vinified naturally: 70% in stainless steel vats and 30% in old 500-liter barrels. Bottled on July 8, 2022, with zero dosage and zero sulfites added throughout. Aged on laths, disgorged at the end of July 2023.

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt.
