A 100% Vermentino from organically grown vines planted in the village of Casta, North of Corsica. This is a parcellaire selection, on the granitic terroir of the Parata plot. Manual harvesting, sorting of the grapes in the vineyard, controlled yields. Natural vinification without additives: direct pressing, cold settling for 24 hours, fermentation and aging in barrels that have seen several wines, maturation on lees. Not fined or filtered, bottled at the Estate with a micro dose of sulfur.
