A 100% Dolcetto cuvée, from 40 year-old vines, cultivated on the clay-limestone soils of the Tassarolo and Gavi vineyards. Vinification: macerated 4 weeks, matured in vats and casks for 24 months. Zero sulphites added at bottling, and no filtering. Nibiô is the local name for Dolcetto, a grape varietal cultivated for more than 1000 years in this region. In Stefano’s words: "A wine that’s rustic and wild in its youth, yet becomes an elegant gentleman as the years pass."
