This is one of the team’s favorite wines, and it’s what convinced us to bring Kevin Bouillet on board! A fruity, indulgent, mineral-driven Chardonnay that’s complete, on pear, mirabelle plum, white flowers... Its rich texture (this is the Jura!) is balanced by a lovely, crisp tension.

100% Chardonnay from 35-year-old vines, grown organically and planted on black Keuper marl soils (we are still in the village of Pupillin). The grapes are harvested by hand and vinified naturally: whole clusters are pressed directly, with no settling; half is fermented and aged in stainless steel tanks, and half in 228-liter barrels and and 400-liter casks, all without new oak, for one year. The wines from the tanks and barrels is blended, then bottled at the estate without fining or filtration, using only a micro-dose of sulfur.

Kevin Bouillet, vintage 1992, is pure Jura through and through: born in Lons-le-Saunier, from Pupillin, he grew up watching his grandparents work the vines, the parents of his mates who made wine, so he'd already put in some cellar time...
