Primarily Chardonnay, and the last of the press wine from the estate’s other white grapes. A cuvée produced thanks to grapes bought to organic winemakers in the Cher Valley. Harvesting by hand, careful grape sorting in the vines. Natural vinification: direct pressing, low temperature fermentation, indigenous yeasts, 6 months of aging in fiber vats and stainless-steel vats. Bottled at the Estate in March 2023 without fining or filtration, just a micro-dose of sulphur.
