A 100% Cabernet Franc, from 130 year old vines grown on a gravel terroir (from a former riverbed of the Vienne – gravelly/sandy), on mounds with a limestone foundation. Farmed organically, and certified AB and Ecocert. Manual harvesting, with yields of around 25 hl/ha. A unique approach to vinification is used: the grapes are removed individually from the stem until they fill 2 barrels; after fermentation, the barrels are dismantled, the grapes are pressed, and the wine is matured in a new 300-litre cask for 2 years. Micro dose of sulphur at bottling.
