A 100% Cabernet Franc cuvée from 60-year-old vines farmed organically, with ploughing of the soil, harvesting by hand, and meticulous sorting in the winery. Vinification with little intervention: three weeks of maceration, more like an infusion, with little punchdowns or pump overs, 18 months of aging in barrels, with one third of new oak. Bottled at the Estate with a micro dose of sulphur.
