100% Côt from old vines around forty years old, grown organically and planted on the very beautiful plot of Herdeleau, clay soils with flint. Manual harvest. Vinification: two and a half weeks of maceration in whole bunches, soft pressing, twelve months of aging in demi-muids. Bottled without fining, filtration or addition of sulfites. A bottle named "Coco" because it is Corinne who takes care of this cuvée!

Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
