A blend of 60% young Gamay vines including some Gamay teinturier (literally ‘dyer’s’ Gamay, once used to add colour to wines), and 40% Pineau d'Aunis from vines farmed biodynamically and planted on flinty clay soils in the commune of Pouillé. Vinification: the two grape varieties are fermented separately in vats, with two weeks of maceration, and are then blended at pressing. Maturation is done half in vats and half in demi-muid barrels. This vintage we have a blend of 2019 and 2020. Unfined, unfiltered, no sulfites added.

Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
