A very complex nose, with notes of baked apples, peat, and almonds in the shell, plus a hint of salted butter caramel... The palate balances the same richness with beautiful tension and minerality, topped off by lovely bitter notes and a long, sublime finish.

This is the second vintage of this 100% Chenin cuvée, made from 60-year-old vines farmed organically in the Fosse-Sèche sector on flinty clay soils, worked entirely by hand, with small yields (20 hl/ha) for high quality juice. The vinification is natural: direct pressing, settling by gravity, fermentation in amphorae for about a year, followed by a year's maturation in the same 10-hectolitre stoneware amphorae. Bottled at the estate without fining or filtration, and just one gram of sulphur.
