A 100% Romorantin cuvée, from 20- and 50-year-old vines grown on a siliceous-clay soil. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines, and low yields: 12 hl/ha. Vinification: direct pressing, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Matured 8 months in demi-muid barrels, bottled with 1 to 1.5 g of sulphur.
