A blended cuvée: 80% Pineau d'Aunis and 20% Pinot Noir in their third year of conversion to organics farming, and planted in the Cher Valley. The grapes were purchased from winegrowers who share a common philosophy, and handpicked using small boxes. Vinification: direct pressing, fermentation with indigenous yeasts (of course), and 9 months of maturation in vats. Bottled without fining or filtration in May 2022, with just a microdose of sulphur.
