100% Pineau d'Aunis for this vintage, from vines grown organically and planted around the town of Vendôme. The grapes were purchased from winegrowers who share a common philosophy, and handpicked using small boxes. Vinification: direct pressing, fermentation with indigenous yeasts (of course), and six months of maturation in vats. Bottled without fining or filtration in March 2023, with just a microdose of sulphur.
